Slow Cooker Turkey Chili

Chili is such a delicious and comforting dish to make, and making it in the slow cooker gives it time for the flavors to become rich and delicious! Plus adding in extra beans and corn really adds extra fiber and nutrients!

Ingredients

  • 2 Pounds Ground Turkey
  • 28 ounces Diced Tomatoes canned
  • 10 ounces Diced Tomatoes with Green Chilies
  • 15 ounce can Red Kidney Beans drained & rinsed
  • 15 ounce can Pinto Beans drained & rinsed
  • 15 ounce can Black Beans drained & rinsed
  • 1 Onion diced
  • 12 ounce bag Frozen Corn
  • 2 Garlic Cloves minced
  • 2 Tablespoons Chili Powder
  • 2 teaspoons Cumin
  • 2 teaspoons Paprika
  • 1 teaspoon Salt or more to taste
  • 1 teaspoon Oregano
  • 1/2 teaspoon Black Pepper
  • 1 Tablespoon Olive Oil for cooking ground Turkey
  • 2 cups Broth optional if you like your chili to have more liquid and be soup like
  • Shredded Cheddar Cheese optional
  • Sliced Green Onions optional

Instructions

  • Heat oil in a large skillet and add diced onion to sauté. Once onion becomes more translucent, add ground Turkey and cook until no longer pink. Crumble the meat as it cooks. Drain grease before adding the browned meat to the slow cooker.
  • Add all other ingredients to slow cooker. Stir to mix well.
  • Cook HIGH 3-4 hours or LOW 6-8 hours.
  • Enjoy over spaghetti squash, cauliflower rice, brown rice or with crackers or tortilla chips.
