Easy Viral Cobbler

This easy viral cobbler gets a simple makeover that’s better for blood sugar without sacrificing flavor! Made with Sweet Loren’s Less Sugar Chocolate Chunk Cookie Dough, juicy strawberries, and a boost of fiber from psyllium husk, it’s a gluten-free, dairy-free, and nut-free dessert that’s perfect for weeknight treats or family gatherings. With just a handful of ingredients and a few minutes of prep, you’ll have a warm, comforting dessert everyone will love.

Ingredients

  • 5 cups frozen strawberries mostly thawed & chopped
  • 1 Tbs Lemon Juice
  • 1 Tbs Psyllium Husk Fiber Powder
  • 1 tsp Vanilla Extract
  • 1 Tbs Maple Syrup I used monk fruit syrup - optional
  • 1 package Sweet Loren’s Ready to Bake Less Sugar Chocolate Chunk Cookie Dough

Instructions

  • Preheat oven to 400F.
  • Thaw strawberries in an oven safe baking dish on counter for 2 hours or microwave for 1 minute to help thaw.
  • Then chop the berries right in the pan to keep all the juices.
  • Add lemon juice, vanilla, sweetener if desired and psyllium husk fiber powder and mix until welll combined.
  • Next, chop the cookie dough chunks into quarters and place them on top of the berry mixture, pushing down slightly. Continue with entire package of cookie dough.
  • Bake at 400F for 30 minutes.
  • Remove from oven and allow to cool for 10 minutes.
  • Serve & enjoy!

Notes

- You can swap and use another kind of berry or blend if you like
- The sweetener is optional - but I tasted my frozen strawberries and they were a bit tart so I added just a little of the monk fruit maple syrup I had to keep it lower in carbs/added sugars. Feel free to omit or use your sweetener of choice.
- We also ate the leftovers cold last time we made it and it gave that retro Strawberry pretzel salad vibes!
- This is not a low carb or zero sugar dessert but it is more fiber and fruit based and using lower to no added sugar ingredients as able makes it a more mindful option for blood sugar balance.
- Eating this dessert right after a balanced meal with protein, non starchy veggies, fat and fiber will also help to keep your blood sugar levels more steady and stable after!
- Next time I want to try this with a frozen berry blend!
- Each serving provides over 6 grams of fiber, thanks to the strawberries and psyllium husk.
- Even though it contains fruit and cookie dough, the fiber helps reduce the net carbs to around 14–15 grams per serving.
- Using the Sweet Loren’s Less Sugar cookie dough also helps keep the added sugar lower than the original viral version.
