Cookie Dough Protein Bars
I was so excited to find a protein bar recipe that I could easily make at home! It does not take a lot of ingredients, it is super easy to make and it tastes like cookie dough!! So what’s not to love! This has been so satisfying and filling - tastes like a dessert but has 21g of protein, and it has been tested with a CGM and it’s blood sugar friendly!

Ingredients
- 1 cup Almond Butter
- 3 scoops measured 75g Vanilla Protein (Just Ingredients, Iconic or Equip)
- 2/3 cup water
- 1 tsp Vanilla extract
- 1/8 tsp Salt
- 3 Tbs Chocolate Chips I used Bake Believe
- Sea Salt Sprinkle
Instructions
- In a large bowl combine Almond butter, protein powder, water and vanilla and mix until well combined. This may take a few minutes as this gets very thick like a dough.
- Put a sheet of parchment in the bottom of an 8x8 pan or spray with non-stick spray.
- Press perfect bar mixture into the bottom of the pan and press until evenly distributed.
- Sprinkle chocolate chips on top of bars and use your fingers to press into the bars.
- Sprinkle sea salt on top if desired and press into bars so that it sticks well.
- Place the pan into the refrigerator for at least 2 hours to set.
- Enjoy!
Notes
- Keep bars refrigerated in an air-tight container; Will stay fresh for up to 7 days
- Different types of protein powder may vary in taste and texture.
- Microwaving 1 bar on a microwave safe plate for 30 seconds makes it taste like a fresh chocolate chip cookie! YUM!
