Baked Chicken Parmesan
Crispy chicken Parmesan that is baked instead of fried. The panko bread crumbs mixed with the Italian seasonings and Parmesan cheese make for a crispy and flavorful crust, without all of the calories!

Ingredients
- 2 Chicken breasts each sliced in half
- 2 Eggs beaten
- 1 Ball Fresh Mozzarella Cheese thinly sliced
- ½ cup Tomato Sauce for topping
- Fresh Basil cut into strips for garnish
- BREADING INGREDIENTS BELOW
- 1/2 cup Whole Wheat Panko Bread Crumbs
- 1/2 cup Parmesan Cheese
- 2 Tbs Fresh Basil
- 1 tsp Garlic Powder
- 2 tsp Dried Oregano
- ¼ tsp Salt
- ¼ tsp Pepper
Instructions
- Pre-heat the oven to 425°F.
- In a medium bowl, combine the panko, parmesan cheese, basil, garlic powder, oregano, salt, and pepper.
- Beat the 2 eggs in a shallow dish. Dip the chicken in the egg wash - soaking both sides , then coat with the bread crumb mixture.
- Transfer the breaded chicken breasts to a greased sheet pan (or line with silicone baking mats or non-stick aluminum foil). Top the chicken with 1 small slice of mozzarella.
- Bake for 20-25 minutes, until the cheese and bread crumbs have turned golden brown and the chicken is cooked through, or until it has reached an internal temperature of 165°F.
- Serve with some tomato sauce and sprinkle of fresh basil.

Serving = ½ large Chicken Breast
Enjoyed best with some noodles (Whole Wheat OR Bean-Based Pasta OR go low-carb with some Spaghetti Squash or Zucchini Noodles) & tomato sauce.
