High Protein Energy Balls

These energy balls can be whipped together for a quick and nutritious snack packed with extra protein and healthy fats! Take these on the go, or pack in the freezer to be pulled out for snacks at a later date!

Ingredients

  • 3/4 cup Peanut Butter I used a drippy kind like Crazy Richard’s
  • 1/3 cup Vanilla Protein Powder
  • 1/2 cup + 2 Tablespoons Rolled Oats
  • 1/4 cup Ground Flaxseed
  • 3 Tablespoons Mini Chocolate Chips I used Lily’s dark chocolate baking chips
  • 2 Tablespoons Pure Maple Syrup
  • 1 Tablespoon Chia Seeds

Instructions

  • In a medium mixing bowl, place the peanut butter, protein powder, rolled oats, flaxseeds, chocolate chips, maple syrup, and chia seeds.
  • With a wooden spoon, mix the dough together until well combined.
  • Use a 1 tablespoon cookie scoop to scoop dough into your palms and shape to make a ball.
  • Roll into balls until all dough is gone. Mixture should make 30 energy balls.
  • Store in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
  • Enjoy!
