Ingredients

  • 1 32-ounce box Trader Joe's Creamy Tomato & Roasted Red Pepper Soup
  • 1 16-ounce package Trader Joe's frozen Outside-In Stuffed Gnocchi
  • 8 oz bag Baby Spinach
  • 1 tsp Olive Oil used to saute gnocchi
  • Salt & Pepper to taste

Instructions

  • Saute the gnocchi in 1 tsp Olive Oil at the bottom of pot over medium heat. Sautee just long enough to start browning the outside of the gnocchi and warm.
  • Add the box of soup to the gnocchi. Stir until warm.
  • Add the entire bag of spinach to the pot and stir until wilted, about 1-2 minutes.
  • Ladle soup in bowls & Enjoy!

Notes

Serving Size = 1/6 of Recipe
  • Trader Joe's is the only place that I have been able to find this specific gnocchi (which is DELICIOUS & Cheese-filled!). You can check it out on their website!
  • Adding in the entire bag of spinach may seem like a lot, but don't worry, this really cooks down!
  • You can actually find this box of delicious Trader Joe's Tomato & Red Pepper Soup on Amazon!
  • Feel free to substitute the tomato & red pepper soup for just regular tomato soup! I just enjoy the red pepper twist that this soup brings!
