Slow Cooker Sausage, Spinach & Bean Soup
Super simple supper that is perfect to whip up on a cold winter day! Just slice some items and throw it in a slow cooker for a no-fuss meal! Loaded with veggies, fiber and protein & packed with so much delicious flavor!

Ingredients
- 2 12 oz packages Chicken or Turkey Sausage Links thinly sliced
- 6 cloves Garlic minced
- 2 Onion diced
- 2 12 oz packages Frozen Sliced Carrots
- 10 Celery stalks diced
- 3 15 oz cans Great Northern beans drained & rinsed
- 2 tsp Rosemary
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 2 tsp Thyme
- 2 tsp Parsley
- 2 tsp Oregano
- 2 Bay Leaves
- 8 cups Chicken Broth
- Salt & Pepper to taste
- 1 10 oz Bag of Fresh Spinach
Instructions
- Place sausage, garlic, onion, carrots, celery, beans, oregano and bay leaves into slow cooker. Stir in chicken broth, season with salt and pepper, to taste.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
- Find & remove Bay leaves.
- Stir in spinach until wilted.
- Serve immediately & enjoy!
Notes
Serving Size = 1.5 cups
- Feel free to mix and match the kind of beans you use! Kidney beans and chickpeas are also quite tasty in this recipe!
