Slow Cooker Sausage, Spinach & Bean Soup

Super simple supper that is perfect to whip up on a cold winter day! Just slice some items and throw it in a slow cooker for a no-fuss meal! Loaded with veggies, fiber and protein & packed with so much delicious flavor!

Ingredients

  • 2 12 oz packages Chicken or Turkey Sausage Links thinly sliced
  • 6 cloves Garlic minced
  • 2 Onion diced
  • 2 12 oz packages Frozen Sliced Carrots
  • 10 Celery stalks diced
  • 3 15 oz cans Great Northern beans drained & rinsed
  • 2 tsp Rosemary
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 2 tsp Thyme
  • 2 tsp Parsley
  • 2 tsp Oregano
  • 2 Bay Leaves
  • 8 cups Chicken Broth
  • Salt & Pepper to taste
  • 1 10 oz Bag of Fresh Spinach

Instructions

  • Place sausage, garlic, onion, carrots, celery, beans, oregano and bay leaves into slow cooker. Stir in chicken broth, season with salt and pepper, to taste.
  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  • Find & remove Bay leaves.
  • Stir in spinach until wilted.
  • Serve immediately & enjoy!

Notes

Serving Size = 1.5 cups
  • Feel free to mix and match the kind of beans you use! Kidney beans and chickpeas are also quite tasty in this recipe!
