Easy Ratatouille

This recipe basically turns vegetables into magic! This classic French dish was inspired by my love for the Disney movie, Ratatouille. This is a fool proof dish that elevates summer vegetables and pairs well with grilled chicken or fish! Such a delicious way to get in your veggies!

Ingredients

  • 1 Bell Pepper cut into chunks
  • 1 Eggplant sliced
  • 1 Zucchini sliced
  • 1 Yellow Squash sliced
  • 2 Tomatoes sliced
  • 2 cups Tomato Sauce divided
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Italian Seasoning

Instructions

  • Cut/slice all vegetables.
  • Pour 1 cup of tomato sauce into bottom of line 13x9 pan
  • Stack the vegetable slices into baking dish alternating between the different sliced vegetables.
  • Once all vegetables are lined in pan, drizzle with olive oil.
  • Next sprinkle the Italian seasoning over the top.
  • Finally pour the other 1 cup of tomato sauce on top of veggies
  • Cover top of pan with foil and bake at 425 for 45 minutes or until vegetables are tender.
  • Remove from oven and allow to cool for 10-15 minutes. Enjoy!
