This recipe basically turns vegetables into magic! This classic French dish was inspired by my love for the Disney movie, Ratatouille. This is a fool proof dish that elevates summer vegetables and pairs well with grilled chicken or fish! Such a delicious way to get in your veggies!

Ingredients
1Bell Peppercut into chunks
1Eggplantsliced
1Zucchinisliced
1Yellow Squashsliced
2Tomatoessliced
2cupsTomato Saucedivided
3TablespoonsOlive Oil
2TablespoonsItalian Seasoning
Instructions
Cut/slice all vegetables.
Pour 1 cup of tomato sauce into bottom of line 13x9 pan
Stack the vegetable slices into baking dish alternating between the different sliced vegetables.
Once all vegetables are lined in pan, drizzle with olive oil.
Next sprinkle the Italian seasoning over the top.
Finally pour the other 1 cup of tomato sauce on top of veggies
Cover top of pan with foil and bake at 425 for 45 minutes or until vegetables are tender.
Remove from oven and allow to cool for 10-15 minutes. Enjoy!
