Easy Ratatouille
This recipe basically turns vegetables into magic! This classic French dish was inspired by my love for the Disney movie, Ratatouille. This is a fool proof dish that elevates summer vegetables and pairs well with grilled chicken or fish! Such a delicious way to get in your veggies!

Ingredients
- 1 Bell Pepper cut into chunks
- 1 Eggplant sliced
- 1 Zucchini sliced
- 1 Yellow Squash sliced
- 2 Tomatoes sliced
- 2 cups Tomato Sauce divided
- 3 Tablespoons Olive Oil
- 2 Tablespoons Italian Seasoning
Instructions
- Cut/slice all vegetables.
- Pour 1 cup of tomato sauce into bottom of line 13x9 pan
- Stack the vegetable slices into baking dish alternating between the different sliced vegetables.
- Once all vegetables are lined in pan, drizzle with olive oil.
- Next sprinkle the Italian seasoning over the top.
- Finally pour the other 1 cup of tomato sauce on top of veggies
- Cover top of pan with foil and bake at 425 for 45 minutes or until vegetables are tender.
- Remove from oven and allow to cool for 10-15 minutes. Enjoy!
