Cilantro Lime Cauliflower Rice

Do you love rice, but want to get in less carbs and more veggies?? Then cauliflower rice is a fantastic way to do that! This recipe is a copy cat off of Chipotle’s cilantro lime rice! The flavors are refreshing and perfect for your burrito bowls!

Ingredients

  • 2 12 oz bags of Frozen Cauliflower Rice
  • 1/8 cup Lime Juice about 1/2 lime juiced
  • 2 Tbs Dried Cilantro or 1/4 cup minced Fresh Cilantro
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt & Pepper to Taste

Instructions

  • Dump bags of cauliflower rice into a microwave safe bowl and microwave according to the time on instructions on bag (usually about 4 minutes total for both bags). Microwave until heated through.
  • Remove from microwave and add lime juice and seasonings. Stir until well combined.
  • Enjoy immediately as a side dish or as the base for your burrito bowl!
