Do you love rice, but want to get in less carbs and more veggies?? Then cauliflower rice is a fantastic way to do that! This recipe is a copy cat off of Chipotle’s cilantro lime rice! The flavors are refreshing and perfect for your burrito bowls!
2TbsDried Cilantroor 1/4 cup minced Fresh Cilantro
1tspCumin
1tspGarlic Powder
1tspOnion Powder
Salt & Pepper to Taste
Instructions
Dump bags of cauliflower rice into a microwave safe bowl and microwave according to the time on instructions on bag (usually about 4 minutes total for both bags). Microwave until heated through.
Remove from microwave and add lime juice and seasonings. Stir until well combined.
Enjoy immediately as a side dish or as the base for your burrito bowl!
