Black Bean and Corn Salsa

This super simple salsa recipe incorporates some pantry ingredients to make for a delicious topping on tacos or a burrito bowl, or a great appetizer with some whole grain tortilla chips!

Ingredients

  • 1 can Corn (15 oz), drained & rinsed
  • 1 can Black Beans (15 oz), drained & rinsed
  • 1 can Tomatoes (15 oz), drained & rinsed
  • 1 Medium Onion chopped
  • 1/8 cup Lime Juice
  • 1 tsp Cilantro dried (or 2 Tbs fresh)
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • Salt & Pepper to taste

Instructions

  • In a very large bowl, combine all ingredients.
  • Cover and refrigerate until serving.
  • Serve with whole grain tortilla chips, use for Burrito Bowls or as a topping on tacos!
  • Enjoy!

Notes

Serving Size = 1/4 Cup
  • Feel free to substitute the canned tomatoes for fresh ones. You can also substitute the canned corn for fresh or frozen corn that has been thawed!
  • For the lime juice, you can use fresh or bottled.
  • Trying to reduce your sodium intake? Use no-salt added canned products and omit the added salt to this recipe.
