5-Ingredient Banana Bread Cookies

Ingredients

  • 4 Ripe Bananas
  • 1 Cup Peanut Butter
  • 2 1/2 Cups Oats
  • 1/4 Cup Mini Chocolate Chips
  • 1 tsp Vanilla Extract

Instructions

  • Preheat oven to 350F
  • Line baking sheet with silicone mats, parchment paper, non stick foil, or spray with non stick spray.
  • Mash bananas in bowl.
  • Whisk in peanut butter and vanilla extract.
  • Fold in oats and chocolate chips.
  • Scoop 2 Tablespoons of batter to make 30 cookies.
  • Bake for 15-18 minutes or until golden brown and bottom forms crust.
  • Enjoy! Store remaining cookies in refrigerator.

Notes

  • Have ripe bananas, but don't have time to make the cookies? Peel the bananas and then toss them in a freezer bag for later use. Thaw them I. The fridge or in the microwave for 1-2 minutes to use in the recipe.
  • If using the bananas from frozen, they may be more liquidy and cookies may need slightly longer baking time.
  • I highly recommend using Silicone Baking mats for your baking sheets - makes getting the cookies off the tray so easy and clean up a breeze!
