Line baking sheet with silicone mats, parchment paper, non stick foil, or spray with non stick spray.
Mash bananas in bowl.
Whisk in peanut butter and vanilla extract.
Fold in oats and chocolate chips.
Scoop 2 Tablespoons of batter to make 30 cookies.
Bake for 15-18 minutes or until golden brown and bottom forms crust.
Enjoy! Store remaining cookies in refrigerator.

Have ripe bananas, but don't have time to make the cookies? Peel the bananas and then toss them in a freezer bag for later use. Thaw them I. The fridge or in the microwave for 1-2 minutes to use in the recipe.
If using the bananas from frozen, they may be more liquidy and cookies may need slightly longer baking time.
