Sun Dried Tomato & Goat Cheese Pasta

This dish is a pasta lovers dream! This is a simple dinner that can be easily thrown together in just over 30 minutes! Grab that leftover white wine you have in the fridge, and elevate this pasta dish! This seriously tastes like a restaurant worthy menu item - without all the work! It is so full of flavor and sure to become your new favorite pasta dish!

Ingredients

  • 3 oz package sun-dried tomatoes
  • 1 small onion chopped
  • 1 Tbs Olive Oil
  • 4 garlic cloves minced
  • 6 oz can of tomato paste
  • 2/3 cup dry white wine
  • 8 ounces Banza pasta
  • Salt and Pepper to taste
  • 2 ounces fresh goat cheese coarsely crumbled
  • 2 tablespoons fresh Basil leaves chopped

Instructions

  • Heat 1 tablespoons of olive oil in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute.
  • Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
  • As you are making the sauce, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid.
  • Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten.
  • Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and basil.
  • Serve immediately & Enjoy!

Notes

Serving Size = 1/6 of the recipe OR ~1 cup
  • Don't like goat cheese? Feel free to substitute with another cheese like mozzarella; or if you are dairy-free, feel free to leave the cheese off or use dairy-free cheese shreds!
  • I used Banza Pasta for this recipe to amp up the protein and fiber in this dish! It helps keep me full for longer!
