Spinach & Artichoke Tortellini Pasta

Ingredients

  • 2 10-ounce packages Trader Joe’s fresh Spinach Tortellini
  • 1 12-ounce jar Trader Joe’s Artichoke Antipasto
  • 1 8 ounce bag Trader Joe’s Baby Spinach
  • 1 14 ounce can of Whole Artichokes, chopped
  • Grated Parmesan cheese sprinkled on top before serving

Instructions

  • Bring a large pot of salted water to a boil. Add 2 packages fresh Spinach Tortellini and cook until al dente, 2 to 3 minutes.
  • Drain, then return to the pot. Add jar Artichoke Antipasto, 1 bag baby spinach and chopped artichokes. Stir until the spinach is just wilted and the tortellini is well coated in sauce, 1 to 2 minutes. Garnish with grated Parmesan cheese, if desired.
  • Enjoy!
