Short-Cut Lasagna
The delicious comfort food dish of Lasagna takes MAJOR short cuts with the use of ravioli! It is also veggie packed and totally easy to make. No prep cooking involved! Just place in the dish & bake!

Ingredients
- 24 ounces Tomato Sauce (about 3 cups)
- 24 ounces Ravioli Frozen or Fresh
- 6 ounces Fresh Spinach (about 5 cups packed)
- 8 ounces Sliced Mushrooms (about 1 1/4 cup)
- 8 ounces Mozzarella shredded (about 1 cup)
- 2 ounces Parmesan shredded (about 1/8 cup)
Instructions
- Heat oven to 375F.
- Spoon a few tablespoons of tomato sauce into a 13x9 inch baking dish. Spread evenly to cover the bottom of the baking dish.
- Lay ravioli on top of the sauce, creating a single layer of pasta (8 to 12 ravioli, depending on the size of your pasta).
- Spread one third of the spinach and sliced mushrooms on top of the pasta. Sprinkle one third of the mozzarella cheese on top of the vegetables.
- Continue layering sauce, ravioli, spinach, mushroom and cheese. Finish with a layer of Parmesan cheese.
- Cover with aluminum foil and and bake for 30 minutes.
- Remove foil cover and bake another 15 minutes.
- Slice and serve immediately.

Notes
- The measurements for the recipe are in ounces - check the bottom of the front of the package to see the weight of the item to determine how much you will need for the recipe. Or weigh your food with a food scale.
- The cool thing about this recipe is that you can really use ANY ravioli you want (vegetable filled, cheese filled, meat filled, seafood filled etc.). Feel free to mix it up, and opt for whole grain versions when possible.
- Try to find a tomato sauce without added sugar OR make your own Tomato Sauce.
