Mediterranean Chickpea Salad
This recipe is fast, healthy & packed with Mediterranean flavors! It's an excellent and exciting way to use up those cans of chickpeas that you have in your pantry. It's a perfect light lunch or a great side dish!

Ingredients
- 2 Cans Chickpeas (15.5 oz) drained & rinsed
- 3 Tomatoes diced
- 2 Bell Peppers diced
- 1 Onion diced
- 2 Tbs Extra Virgin Olive Oil
- 1/4 cup Lemon Juice
- 4 Cloves Garlic minced
- 1 tsp Cumin
- 1/2 cup Fresh Parsley chopped
- Salt & Pepper to taste
Instructions
- Open cans of chickpeas, drain and rinse. Then add chickpeas to a large bowl.
- Dice tomatoes, bell peppers and onion and then add to bowl with chickpeas.
- Next, add olive oil, lemon juice, garlic, cumin, salt and pepper to the bowl with vegetables and chickpeas. Stir until well combined.
- Wash and dry fresh parsley leaves. Chop up parsley and add to the bowl with all other ingredients. Mix in until combined.
- Enjoy immediately or store in an air tight container for a few hours before eating to allow flavors to soak in!

- This is a great recipe for meal prep as it can store well!
- This is a fantastic vegetarian/vegan dish that can be served on a bed of greens, with whole grain crackers or pita.
- For extra protein feel free to combine with grilled chicken, feta cheese, salmon or other protein source!
