Christmas Surprise Cookies
How fun is this green color & it’s natural without food coloring?? No food coloring needed because the chlorophyll in sunflower seeds (in the sun butter) reacts with baking soda when baked. This causes the green color once cookies have cooled completely - make sure you wait for that part! A fun science lesson for baking with the kiddos too! This is an easy one bowl recipe - GF, DF, Nut free, sugar free and low carb so perfect for balancing those blood sugars! And a perfect healthy treat to celebrate Christmas - I like making them smaller at Christmas to keep the a better size for tasting multiple treats!
Servings 36 cookies
Ingredients
- 1 cup sunflower seed butter I used the Sun Butter brand that contains no added sugar
- 3 eggs
- 2 tsp vanilla extract
- 1/2 c coconut flour
- 1/4 c unflavored collagen powder
- 1/3 c monk fruit sweetener or granulated sweetener of choice I have also used coconut sugar
- 1 tsp baking soda not powder
- ⅓ cup Dark Chocolate Chips for Topping I used Lily’s Sugar-free chocolate chips
- OPTIONAL - sprinkles on top before baking be sure to press them down so that they stick
Instructions
- Combine wet ingredients in a bowl and mix.
- Add all dry ingredients except the chocolate chips and mix well (you can also use a stand mixer and mix until ingredients are well combined).
- Roll into 36 cookie dough balls and slightly flatten with palm (they expand slightly while baking).
- Press chocolate chips and sprinkles if desired onto the top of cookies and bake at 350° for 6 minutes.
- Take out of the oven and cool completely to wait and see the reaction happen! Note - the cookies have to be cooled for some time to see full green color, but be patient, it will happen!
- Enjoy and then store leftovers in the fridge.

- My favorite monk fruit sweetener
- Want to use another sweetener - substitute with your granulated sweetener of choice. I used coconut sugar and it turned out well!
- This time I only used 3 chocolate chips on each cookie, next time I will put on 5 chocolate chips since the cookies expand a bit.
