Baked Feta Pasta
Heard of this famous Tik Tok recipe and had to give it a healthier spin on it! Adding extra cherry tomatoes provides extra flavor and veggies to the dish. Also substituting regular pasta for chickpea pasta provides more protein & fiber to this dish making it more filling and nutritious! This creamy pasta dish is so simple and delicious, definitely understand now what all the hype was about!

Ingredients
- 3 pints 20 ounces Cherry Tomatoes
- 4 Tablespoons Extra Virgin Olive Oil
- 8 oz block Feta Cheese
- 8 oz box of Banza pasta
- 3 cloves Garlic minced
- 1/4 cup Fresh Basil Leaves thinly sliced
- Salt & Pepper
Instructions
- Preheat the oven to 400 degrees F.
- Toss the cherry tomatoes and olive oil with salt and several grinds of black pepper in a medium bowl until combined.
- Transfer cherry tomatoes to a 3-quart baking dish, place the feta in the center of the tomatoes and season with salt and pepper.
- Bake until the tomatoes have burst and the feta has softened, about 30 minutes.
- Raise the heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown, 10 to 15 minutes more.
- While tomatoes and feta are in the oven, bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook until al dente. Reserve 1/2 cup of the cooking water, then thoroughly drain the pasta.
- When the tomatoes and feta come out of the oven, stir in the minced garlic.
- Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce.
- Next, add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time to thin it out.
- Taste and add more salt and pepper as needed.
- Serve topped with the remaining basil and a pinch of sea salt.
