How fun is this green color & it’s natural without food coloring?? No food coloring needed because the chlorophyll in sunflower seeds (in the sun butter) reacts with baking soda when baked. This causes the green color once cookies have cooled completely - make sure you wait for that part! A fun science lesson for baking with the kiddos too! This is an easy one bowl recipe - GF, DF, Nut free, sugar free and low carb so perfect for balancing those blood sugars! And a perfect healthy treat to celebrate St. Patrick's Day!

Ingredients
1cupsunflower butterI used the Sun Butter brand that contains no added sugar
3eggs
2tspvanilla extract
1/2ccoconut flour
1/4cunflavored collagen peptides
1/3c+ 2 Tbs monk fruit or granulated sweetener of choice
1tspbaking sodanot powder
Dark Chocolate Chips for ToppingI used Lily’s Sugar-free chocolate chips
Instructions
Combine wet ingredients in a bowl and mix.
Add all dry ingredients except the chocolate chips and mix well.
Form into cookie shapes (they expand while baking) - makes 12 large cookies.
Press chocolate chips onto the top of cookies and bake at 350° for 10 minutes.
Take out of the oven and cool completely to wait and see the reaction happen!
