Ingredients
1cupquinoauncooked
2cupswateror chicken bone broth
2cupsparsleychopped
1/2cupmintchopped
2large cucumberschopped
8ozfetachop into crumbles
1/2cupred onionchopped
15ozcan chickpeasdrained and rinsed
2lemons juicedabout 6 tablespoons
1/4cupextra virgin olive oil
Salt and pepperto taste
Instructions
Add quinoa and water to a small pot and bring the water to a boil. Reduce to a simmer, cover and cook for 15 minutes. Fluff with a fork and let cool for 30 minutes.
Drain and rinse the chickpeas.
Chop the parsley, min, cucumbers and red onion.
In a medium bowl, stir together cooked quinoa, cucumber, parsley, mint, red onion, chickpeas, lemon juice, olive oil, salt, pepper and feta.
Serve immediately or let the salad chill in the fridge a couple hours before serving.
