This salad is perfect for fall - especially if you just went apple picking and have some of your favorite apples on hand! This salad brings such delicious notes with apples, cranberries, cashews and cheese and it is the perfect side dish, awesome lunch with grilled chicken, and is such a crowd pleaser! This delicious salad is also known in our house as, "Aunt Susan's Salad" because she is famous for bringing this to family gatherings! I have just lightened up the original recipe a little bit, without sacrificing the flavor!

Blender or Food Processor to make Salad Dressing
Ingredients
For the Salad:
2HeadsRed Leaf Lettucechopped
1cupShredded Swiss Cheese
4Applesdiced
1packageReduced-Sugar Dried Cranberries
For the Dressing:
1/4 cupSweetenerI used stevia
1cupApple Cider Vinegar
1/2 cupOlive Oil
1 1/2tspPoppy Seeds
1 tspSalt
1tspDry Mustard
Instructions
For the Dressing
Place all salad ingredients into the blender. Blend until all ingredients are well combined, for about 1-2 minutes. Place in a container or salad dressing bottle until ready to use.
For the Salad
Wash lettuce and dry with paper towels or a salad spinner. Chop into pieces and place in a bowl.
Wash and dice apples into bite-sized pieces.
When ready to serve salad, place lettuce, apples, cashews, cranberries and cheese into a bowl and toss until well combined. You can dress the salad, or keep on the side to prevent the lettuce from getting soggy.

Notes
Serving Size = 1 1/2 cups of salad
I opt for the reduced-sugar Cranberries, since the regular version has a great deal of sugar! You can also substitute the dried cranberries for raisins if you prefer!
I used Stevia in place on sugar in the salad dressing in order to reduce the sugar content of the dressing and the recipe. Feel free to use another sweetener of your choice (no calorie options - Splenda, Monk Fruit Extract, Swerve) or (natural options - Honey, Agave, Maple Syrup)
