Ingredients
1canSolid White Albacore Tunadrained
1/2largeRed Bell Pepperdiced
1/2largeCarrotpeeled and diced
1/4cupGrape Tomatoesdiced
1smallAvocadomashed
1Scallionthinly sliced
2Limesjuiced
Sea Saltto taste
Black Pepperto taste
Instructions
Cut the bell pepper in half and dice into pieces.
Peel the carrot and dice.
Quarter the grape tomatoes.
Use kitchens or slice the green part of the scallion into thin rings.
Cut the avocado in half and rotate the avocado until the knife goes all the way around. Remove the pit. Scoop out the avocado and place into the bowl. Mash with fork until smooth.
Cut the limes in half and juice with a citrus juicer, or over bowl and use palm of hand to catch seeds while juice goes into bowl.
Place all ingredients into a bowl and mix together until well-combined.
Enjoy over a salad, dip with vegetables or whole-grain crackers.
