Sweet Potato Gnocchi Sheet Pan Dinner
When dinner can be thrown together with just 3 main ingredients, it sure is a winner! Trader Joe's has some amazing Sweet Potato Gnocchi that deliciously pairs with Brussels Sprouts and Chicken Sausage for an easy sheet pan dinner that brings all the awesome fall flavors!

Ingredients
- 1 bag Trader Joe’s Frozen Sweet Potato Gnocchi
- 1 lb. Brussels Sprouts trimmed & halved
- 1 12 oz. package Trader Joe’s Chicken Sausage, sliced
- 1 Tbs Olive Oil
- 1 tsp Garlic Powder
- Salt & Pepper
Instructions
- Preheat the oven to 425F.
- Line a large sheet pan with non-stick foil, a silicone baking mat (my personal fave for easy clean up!) or spray with non-stick cooking spray.
- In a large mixing bowl, toss Brussels sprouts with 1 Tbs of the olive oil, garlic powder, salt and pepper.
- Place Brussels sprouts on one side of the sheet pan in a single layer.
- Next add sliced chicken sausage to the sheet pan in a single layer.
- Then, empty the bag of sweet potato gnocchi in the remaining portion of the baking sheet.
- Place sheet pan in the oven and bake for 25 minutes.
- Enjoy!
