Spinach-Artichoke-Sausage Cauliflower Gnocchi
This simple skillet dinner was dang delicious! It uses some convenience items like turkey sausages and canned artichoke hearts to bring together a yummy dish that is done in just minutes!

Ingredients
- 1 8 oz Bag Fresh Spinach
- 1 12 oz Bag Frozen Cauliflower Gnocchi
- 1 Tbs Olive Oil
- 4 Cooked Turkey Italian Sausages Sliced
- 2 14 oz Cans of Artichoke Hearts, drained & quartered
- 1 clove garlic minced
- 1/4 cup Parmesan Cheese
Instructions
- Boil Turkey Italian Sausages in pot of boiling water until sausages are done cooking (Check internal temperature to have reached 165). When done cooking, remove from pot of water. Let rest 5 minutes to allow for cooling off. Then slice into bite sized pieces to be added to skillet.
- While turkey sausage is cooking, on medium-high heat use a non-stick pan with 1 Tbs Olive Oil to sautee minced garlic for 1 minute.
- Then add cauliflower gnocchi to sauté until slightly Golden brown.
- Drop heat down to medium. Next, add artichoke hearts to pan and stir until well combined and becomes warm.
- Next, add fresh spinach a handful at a time and stir into skillet in between handfuls to mix until well combined.
- Then add sliced Italian Sausage to mixture and mix until combined. Take skillet off heat and add cheese and combine.
- Use pinch of cheese on top of dish to garnish final plate.
