Slow Cooker Chicken Cacciatore

This amazing comfort food dish can easily be made with the help of a slow cooker! This traditional Italian dish blends herbs, vegetables and chickens for this delicious meal!

Ingredients

  • 2 lbs Chicken Thighs or Chicken Breasts
  • 2 Bell Peppers sliced
  • 1 Onion diced
  • 2 cans Diced Tomatoes with juice
  • 2 cups Mushrooms sliced
  • 2 cloves Garlic minced
  • 2 Tbs Italian Seasoning
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Chicken Broth

Instructions

  • Add the chicken to the bottom of the slow cooker and season well with salt, pepper, and Italian seasoning.
  • Add the bell peppers, onion, garlic and mushrooms over the chicken and mix well.
  • Pour the broth and tomato over the top of the chicken and mushooms and mix well to combine.
  • Place the lid on top of the slow cooker and cook on low for 6-8 hours or high for 3-4 hours. The chicken should be cooked through to 165 F.
  • Enjoy with pasta, rice, cauliflower rice or potatoes!
