Fall Harvest Skillet

This is such a simple meal to throw together and so tasty! With sweet potatoes, butternut squash, onions, apples, Brussels sprouts and ground pork, this healthy skillet is packed with flavor and delivers every food group in one pan! Utilizing frozen veggies definitely is a great short cut for this recipe!

Ingredients

  • 1 Pound Pork Sausage
  • 2 Bags of Frozen Brussels Sprouts
  • 1 Bag of Frozen Diced Sweet Potato
  • 1 Bag of Frozen Diced Butternut Squash
  • 1 Onion diced
  • 3 Apples cored & diced
  • 1 Tbs Olive Oil
  • 1 Tbs Garlic Powder
  • 2 tsp Ground Thyme
  • 2 tsp Ground Rosemary
  • Salt & Pepper to taste

Instructions

  • Place ground pork sausage into skillet on medium to high heat to brown. Check that the internal cooking temperature reaches 160 degrees Fahrenheit.
  • When ground pork is done cooking, remove from heat and place pork into a plate padded with paper towels in order to drain and soak up the additional fat. Place pork to the side to be added later.
  • Place that same skillet back on the burner and add 1 Tbs olive oil along with diced onion in order to sautee until it starts to become translucent.
  • Once onion is cooked, then add bags of frozen Brussels sprouts, sweet potatoes, butternut squash and diced apples. Heat over medium to high heat, stirring occasionally. Continue to heat and mix until vegetables become tender and are warm. Add in garlic powder, ground thyme, ground rosemary, salt and pepper.
  • Once vegetable mixture is done cooking, add the pork sausage back to the skillet and mix thoroughly.
  • Remove from the heat and serve immediately.

Notes

Serving Size = 1 1/2 Cup (or 1/8th of Recipe)
  • Feel free to substitute the ground pork sausage and use diced chicken instead for a lighter option!
  • You can also use fresh sweet potatoes, butternut squash and Brussels sprouts in this recipe instead! Just allow for extra time to prep the produce and cook as it will likely take longer than using the frozen versions.
  • This recipe also saves well for leftovers & is great for meal prep!
