Chorizo & Potato Nachos
As a Nacho Lover, these potato nachos are THE BOMB! Here's an easy 30 Minute Recipe to Prepare with ONLY 4 Ingredients! Quick Dinners don't have to be Fast Food! This meal was inexpensive & healthy (especially compared to getting nachos/fries out at a restaurant) , contained Lean Protein, Extra Veggies for Layering, and Starch (which were baked instead of fried).

Ingredients
- 1 Package Soy Chorizo
- 2 Green Peppers
- 1 Onion
- 4 Potatoes
Instructions
- Take the chorizo out of the casing and heat up in a pan over medium heat. Break up the chorizo into pieces (will look like ground meat).
- Slice the potatoes thin and bake at 425F with olive (use olive oil sprayer), salt and pepper for about 25 minutes (flipping potatoes half way) or until golden brown.
- Slice peppers and onions into strips. In a separate pan, sautee Peppers and Onions until tender. These will add some extra veggies and layered on the Potato Nachos!
- When all ingredients are cooked, layer on a plate starting with potato slices (as nachos), then peppers and onions, and finally ground soy chorizo.
- Enjoy

Pro Tips:
- Top with Cheese, Salsa and Cilantro for some extra goodness and flavor!
- The Chorizo is already well seasoned, so more seasoning wasn't necessary.
- Trader Joe's carries this Soy Chorizo that I used in this recipe. Feel free to substitute with other plant-based meat substitutes or other ground meat!
