Broccoli Cheddar Quiche
This is such a simple breakfast to throw together for meal prep or for a nice brunch! The broccoli and cheese combination can’t be beat and the eggs and cheddar make it a great high protein breakfast option. It’s also made crust less for a lower carb option. Plus you’re sneaking in veggies at breakfast which is a great way to add fiber to your day!

Ingredients
- 1 Head Broccoli finely chopped
- 1/2 Onion finely chopped
- 12 Eggs
- 1 cup Cheddar Cheese shredded
- 1/2 tsp Salt
- 1/2 tsp Pepper
- Cooking Spray
Instructions
- Preheat oven to 350 F. Spray a 9-inch round cake pan or a 7x11 inch baking dish with oil spray (I used avocado oil spray).
- Whisk eggs and salt & pepper together in a large bowl until combined. Mix in broccoli, cheddar and onion.
- Add egg mixture to the greased pan, then bake in the oven for 35 minutes, or until an inserted toothpick comes out clean.
- Cut quiche into 6 slices and serve.
