Broccoli Cheddar Quiche

This is such a simple breakfast to throw together for meal prep or for a nice brunch! The broccoli and cheese combination can’t be beat and the eggs and cheddar make it a great high protein breakfast option. It’s also made crust less for a lower carb option. Plus you’re sneaking in veggies at breakfast which is a great way to add fiber to your day!

Ingredients

  • 1 Head Broccoli finely chopped
  • 1/2 Onion finely chopped
  • 12 Eggs
  • 1 cup Cheddar Cheese shredded
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • Cooking Spray

Instructions

  • Preheat oven to 350 F. Spray a 9-inch round cake pan or a 7x11 inch baking dish with oil spray (I used avocado oil spray).
  • Whisk eggs and salt & pepper together in a large bowl until combined. Mix in broccoli, cheddar and onion.
  • Add egg mixture to the greased pan, then bake in the oven for 35 minutes, or until an inserted toothpick comes out clean.
  • Cut quiche into 6 slices and serve.
  • Enjoy!
